Because to keep balance the Avatar should not remain the same person. In essence, the avatar is immortal. It's the light spirit, Raava, that makes them the "avatar." If the body and personality was the same for all eternity, you could not promise that the host would lose interest and become bad. By changing bodies, the Avatar remains fresh and is best for the betterment of the world.

Avatarstate is a mechanism that enhances the benders bending when their about to die, but it doesn't save them in a literal sense that you interpeted. Remember when Azula shot Aang with lightning? He actually could have died if it weren't for Katara and her healing ability with the aid of the special mystical water.

Korra is another example that the avatar can die by other means than just of old age. She sould have died by the mercury poison, but Suyin managed to save her in time by bending the damaging substanches from her body.

I would laugh If the water happened to be the one that heal Aang alone with or without Katara's bending help....

People would look stupid for praising the waterbender as the most "powerfull" healer, without question beforehand if the bending had affect on the water, lol.
