I know everyone is suggesting new bending moves but how about if there were flying bisons? They would look like cows but they could fly and players could ride them around and breed them. They'd have higher health and be much rarer then normal cows. They would only spawn in plains biomes and had to be tamed with lots and lots of wheat. In order to spot a bison, they would have air particles follow them wherever they went. When tamed, the bison could act like a wolf and either follow the player around or sit and wait for them back at the player's home. They could also protect the player by air bending attacking players or mobs. here are some pics of bison:
