With this ability, you can reach high places or descent gracefully, both in diagonal means. You can also change the state of a one block, a row, or a chuck of blocks into stairs blocks.
Transportation
By running towards and jumping (or left clicking, If it ain't doable) above direct earthground, (with enough bendable blocks and necessary material) you can jut up to maximum of 6 blocks far and high stairway, made out of stairs blocks (duh!). The first Block you run (or jump) over forces itself to jut up and transform into respective colored Stairs block (if there isn't, then it doesn't transform). The Next adjastent block you run/jump over adds another block to jut over each time and lifts the stairs block atop higher.
Basically, for short: you create stairs in your wake as you're running, which is kinda like the principle of an escalator transporation, that gets formed beneat your feet (and carries you up). You can also walk down elegantly If you walk of a edge to a 6 blocks deep crater.

Utility
Another use for it - to transform stairs without sprinting from a smooth surface. As I said, you don't sprint. Left click the block you wanna transform into stairs block (make sure the cube block has a look-alike stairs counterpart (blocks such as dirt can't transform)). Hold sneak and left click to erupt up 6 blocks high, far, but 1 block wide stairway-up/down stairs . Hold sneak and let go of sneak to erupt up 6 blocks high, far and wide stairway-up/down stairs.
Using either one of the sneak methods while looking at a climable hill, it will instead transform the blocks into stairs in respective dimensions based on the execution. This is exactly what Toph did, except it was in reverse (and imagine the 'slide' was like a minecraft's climable mountain in da show).
