I've got two reasons for this:
1) After ripping the iron/gold out of an ore, it currently changes to stone. It should instead be destroyed because the ore block realistically would crumble rather than refill with new stone.
2) Makes it easier to get the ores underneath the first layer. Right now after using extraction on an ore block, you have to mine around to get to the rest of the vein. Destroying the ore block would just make this process a lot easier.
