Aang is not where near as proficient with water bending as Katara, yet he knows how to use the octopus form. If everything was based upon master level bending barely any moves would exist to the benders arsenal, because a lot of what the bending has is from the show that included both masters...

I gave you my reasoning, you don't have to agree with it, its not an issue either. Air spout and Waterspout were both displayed in the show, Phase change and Heat control as well, Fire burst, Air burst, Shock wave, Torrent Wave is not really canon, but that's Orion's code not ours I believe.

I don't believe it was the dance that did it, personally. Considering Iroh was able to meet the dragons without doing the dance, I would assume it is not a requirement. The dance surely helped though :3

Remember, in the show the Dancing Dragon did not tame the dragons, it simply showed Aang and Zuko the true meaning of firebending, also commands to activate things is kind of lame.

This really sounds like a waterbender point of view, we don't really see firebenders redirecting anything except for lightning. We usually see a power struggle between them during a fight to overpower the enemy.
